Whether you join us at Spirit for our soft, house-made vegan banana pancakes or feel inspired to make them yourself at home with the recipe below - we’ve got the perfect slow morning covered.

Breakfast

Ingredients:

  • 80 g unsweetened apple sauce
  • 100 g banana
  • 40 g raisins
  • 50 g almond flour
  • 50 g oat flakes
  • 200 g self-rising flour
  • 480 g almond milk
  • ¼ tsp cinnamon
  • 35 g maple syrup
  • ¼ tsp sea salt
  • sunflower oil for greasing the pan

For the garnish:

  • 20 g coconut blossom sugar
  • a pinch of cinnamon

Tools:

  • food processor

Preparation:

  1. Blend the banana, apple sauce, almond milk and maple syrup in a food processor until smooth.
  2. Combine all dry ingredients in a bowl. Add the puree and mix into a batter. Fold in the raisins.
  3. Fry the pancakes in a lightly oiled pan until golden brown. Mix the coconut blossom sugar with the cinnamon and sprinkle over the freshly baked pancakes.
