It's Asparagus Season

The asparagus season is short, usually just a few weeks in spring, which makes it the perfect moment to enjoy them while they're at their best.

You'll find them freshly harvested and sold at Gimsel, sourced from two Dutch farms we work closely with.

Our green asparagus come from Biovader in Oude Tonge, where Helma and Ronald grow their crops organically, using crop rotation with care for the soil and biodiversity. Our white asparagus are grown in Brabant by Erik Verhoeven, who continues his family's tradition with a strong focus on soil health and natural cultivation methods.

At Spirit, they find their way on the buffet in a few new dishes from our kitchen - grilled, in a green curry, rolled into sushi, served with quinoa, or as a fresh, creamy soup.
